Liberian Rice Bread

• 1 box [14 oz] Cream of Rice cereal
• 1 cup sugar
• 3 teaspoons ground ginger
• 1 teaspoon nutmeg
• 1 teaspoon baking soda
• 1/2 teaspoon salt
• 1 cup milk
• 3/4 cup vegetable oil
• 2 eggs
• 1 teaspoon vanilla
• 4 plaintains (or 4 bananas), mashed or chopped in the blender

1. Preheat oven to 180°C.
2. Spray a baking pan with non-stick baking spray.
3. Combine dry ingredients in a large bowl.
4. In a smaller bowl, mix eggs, oil, vanilla and mashed plantains or bananas. Add milk and combine.
5. Add wet ingredients to dry ingredients and mix well.
6. Transfer to baking pan.
7. Bake for about 30 to 45 minutes or until done. The pan size will make a difference in the timing.
